Avocado Salad Video Tutorial:

My husband and I ate this entire batch of cucumber tomato salad with avocado in one sitting, paired with roasted red potatoes and grilled shrimp skewers. I shoveled most of the salad into my mouth before I remembered the shrimp and potatoes on my plate; mmming and smiling all the way through. We were both smitten.

P.S. This salad is also super healthy and it fits pretty much every diet out there. Check out the nutrition label below:

I haven’t tried that so I’m not sure. It would get a little juicy I imagine. A couple of my readers have said that it carries over well to the next day but it has always gotten eaten right away whenever I make it 🙂

I’m a bachelor who loves to cook but experiments a lot especially when I don’t have the exact ingredients. Do you think sliced dill pickles would work? I’m going to try & let you know.

Do you mean canned dill pickles? I don’t think that would work well.

    Hello Natasha,

Me and my wife Amanda really enjoyed your avacado, cucumber & tomato recipe.
Thank you for your instructions as I was unsure what to do with an avicado and a hungry lady making her way back from work.

    Best regards,

    Great salad recipe!

Can field cucumbers and field tomatoes (now available at farmer’s markets) be substituted for the English cucumber and Roma tomatoes?

Kerri, I don’t usually put up nutritional info so I don’t know it off the top, but when I need to research something, my best source: Caloriecount.com – sign in for free and then go to “tools” and then click “recipe analyzer” You can copy and paste your list of ingredients and it spits out the nutrition info. It’s a great tool.
