This Instant Pot Rice recipe is a healthier, juicier and flavor packed rice pilaf called plov. It all comes together in 1 pot (the instant pot!) and you won’t believe how quick and easy this is.

Traditionally, beef plov is made with white rice, but we used a brown rice which was perfect for the instant pot because it doesn’t get mushy while the beef becomes melt-in-your mouth tender. Brown rice is also way healthier and your hungry people may not even realize it is brown rice. It works so well in this recipe!

Ingredients for Instant Pot Rice Beef Plov:

2 1/2 cups short grain brown rice (500 grams), rinsed and drained*
1 lb beef chuck or beef stew meat, cut into 3/4″ pieces
4 Tbsp olive oil
4 Tbsp butter
1 large onion, diced
3 large carrots, thickly julienned
3 cups (720 ml) very warm water
1 Tbsp salt (we used fine sea salt)
1/2 tsp black pepper
1/2 tsp ground cumin
1/2 tsp ground paprika
1/2 tsp ground coriander
1 whole head garlic, unpeeled, cut in half crosswise.
1 Tbsp freshly chopped parsley to garnish – optional

*TIPS FOR SUCCESS: We used organic short grain brown rice (I buy the “Lundberg” brand bag sold in Costco). DO NOT USE quick cooking rice, parboiled or white rice – these would all need modifications in timing and water. Use a standard measuring cup or a kitchen scale to measure the rice (not the measuring cup that comes with your instant pot).

Cook Time: 30 minutes
Total Time: 50 minutes

Ingredients 

Servings: 8 as a side dish
  • 2 1/2 cups short grain brown rice, 500 grams, rinsed and drained*
  • 1 lb beef chuck or beef stew meat, cut into 3/4" pieces**
  • 4 Tbsp olive oil
  • 4 Tbsp unsalted butter
  • 1 large onion, diced
  • 3 large carrots, thickly julienned
  • 3 cups 720 ml very warm water
  • 1 Tbsp salt, we used fine sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp ground paprika
  • 1/2 tsp ground coriander
  • 1 whole head garlic, unpeeled, cut in half crosswise.

Instructions

  • Rinse and drain rice and set aside. Set Instant pot to sauté on high heat (push sauté twice to switch to high heat) and add 4 Tbsp olive oil. Once oil is hot (but not smoking), add beef in a single layer and sauté until lightly browned (5 min), stirring occasionally.
  • Add 4 Tbsp butter and chopped onion and stir 3 minutes until softened.
  • Add julienned carrots along with all seasonings (1 Tbsp salt, 1/2 tsp pepper, 1/2 tsp cumin, 1/2 tsp paprika, 1/2 tsp coriander) and sauté 5 minutes until softened, stirring occasionally.
  • Spread rice evenly over the top (do not stir). Push garlic halves cut-side-down, halfway into the rice. Pour very warm (or hot) water directly over the garlic cloves so you don't disturb the rice. Use the back of a wooden spoon to poke 5-7 holes through the rice to the bottom of the pot (this helps disburse flavor).
  • Cover and cook on high pressure 30 min (I used the "Multigrain" setting). Let instant pot rest and naturally depressurize 10 min before switching to the venting position to release steam. Make sure the steam is fully released and the pressure valve has floated down before opening the pot.
  • Remove garlic and set aside. Stir rice well to combine ingredients. We squeeze the garlic cloves back into the pot because they are melt-in-your mouth delicious.

Notes

*We used organic short grain brown rice (I buy the bag sold in Costco)
**The meat will brown easier if you leave it at room temperature 30 minutes before starting to cook it.

    I bought my instant pot a few years ago and have since made all manner of things in it. It is just so handy. I probably use it at least four to five times a week. This recipe looks fantastic and I love that you used a short grain brown rice. I buy the same Lundberg rice and so always have it on hand. I plan to make this next week, but I wondered if you have ever tried it with a no sodium beef broth instead of water? I think I might try that myself.

    One of my favorite, easy meals is to brown some minute steaks or chuck steaks in the instant pot then add some baby carrots, top with a jar of newmans own sockarooni sauce (I usually add about 1/4 cup of broth to the bottom of the pan to deglaze first) and cook on the meat/stew setting for 30 minutes. Serve atop some cooked egg noodles with a sprinkle of grated parm and it makes for an easy, simple and delicious meal. You could use your own pasta sauce I am sure, I just keep some jars of newman’s own on hand for fast meals since I have two teenaged boys who have hollow legs.

    Just ate dinner with this juicy, tasty plov! My husband did not like the chewiness of the brown rice. He never liked anything like barley or green lentils anyways. Maybe next time I will repeat this recipe with white rice and chicken because they both cook quickly, just for him. I really liked it with brown rice. Plus it’s just one pot meal!     This recipe was amazing!! For those asking about white rice, I tried it and it turned out perfectly. I did 1 cup water per every 1 cup rice. Cooked it on multigrain setting for 15 mins. Delicious!

    I have made this recepie twice so far and 30 min on multigrain setting is not enough to fully cook brown rice. I end up adding an extra 10 min. Not sure if I’m doing anything wrong, I did follow the instructions and I used organic brown rice also. I have the instapot brand pressure cooker.

      Hi Irina, the brown rice does have a little more bite to it normally compared to white rice which gets considerably softer. It’s totally ok to cook an additional 10 minutes or just let it depressurize naturally for a longer period of time.

      If you are new to the instant pot, I cannot stress enough to make sure to read the manual and do the practice run they suggest with just water so you are comfortable with it. For this instant pot recipe, I use the “multigrain” setting

      Hi Carmen, white rice is not ideal because it would become overcooked by the time the beef was tender. 30 minutes in the pressure cooker is much beyond the recommending pressure cooking time for white rice which is why brown rice works so well. It cooks perfectly when the meat is tender.

      Hi Julia, I haven’t tested that but maybe try stir in some dried fruit at the end before you close the lid. I haven’t tested it personally, but I think there would be enough liquid to handle some dried fruit – hopefully the dried fruit won’t get too overcooked. If you experiment, please let me know how it goes 🙂

I did do 2lb of beef and doubled all seasonings. I also did 5cups of rice and 5 cups of water. Fit to a T in the 6QT.
      Came out perfectly fine…”
      So I think it would work well in an 8qt pot 🙂

      Hi Joan, I found that when I add the butter, onion and carrots, the steam from those helps to deglaze the pan naturally as you stir/sautee those.

      Hi Bernadette, I make this with short grain but one of my readers reported the following which should help: “I used long grain brown rice and used 2.5 cups of water kept the cook time at 30 minutes. Might try 25 next time. It still turned out wonderful though. Delicious and flavorful, with a great bite to the rice. Thanks for this!”

        Hi Natasha, thanks for responding so quickly! I used 3.5 cups of water with my long grain brown rice and that worked great. Next time I might reduce the time cooked or release right after 30 minutes because the rice was a little less firm than brown rice normally is. Love the recipe! My husband said he wants me to add mushrooms next time. He always wants me to try your shrimp scampi with asparagus recipe – so thanks for all the wonderful ideas.
