Radish and Cucumber Salad Recipe

You must try this Radish and Cucumber Salad with a simple sour cream dressing. Radishes have a very satisfying crunch and they're so good for you!

My husband said this radish and cucumber salad takes him back to his childhood in Ukraine. Radishes are very popular in European dishes. It’s a bummer they’re under-appreciated in the states because they are so good for you; rich in Vitamin C, Folic Acid and Potassium, oh and they aid in digestion too.

Radishes also have a very satisfying crunch; Mmm! I love that this simple sour cream dressing neutralizes the radishes slight pungent flavor and enhances their sweetness. I was impressed when my 4 year old ate and enjoyed this radish and cucumber salad. It’s a winner! It’s also way too easy to make!!

Ingredients for Radish and Cucumber Salad:

1 English Cucumber, thinly sliced
2 bunches radishes, thinly sliced
1 bunch scallions, chopped
3/4 cup sour cream
3/4 tsp to 1 tsp Salt, or to taste

3. Stir the sour cream dressing into the salad just before serving. The longer it sits, the more liquidy the dressing becomes as the salt causes the cucumber to release some juice. But I guarantee you’ll use a spoon to gather any extra juice left behind. It’s so yummy!

I hope you all have a wonderful and blessed Easter weekend! It is such a meaningful holiday to me.

Praise be to the God and Father of our Lord Jesus Christ! In his great mercy he has given us new birth into a living hope through the resurrection of Jesus Christ from the dead…” (1 Peter 1:3 NIV).

That’s pretty much the BEST NEWS in the universe. So thankful!

P.S. What are you cooking up for Easter? I’d love to know!

This looks delicious! But, it looks like you used chives, but recipe says green onion? Reply

I use them interchangeably in this salad. Either one works great 🙂 Reply

Almost making the same salad but instead of cucumbers I usually add hard boiling eggs. Turns out great as well… Try it…
