How to Serve Chicken Patties:
Honestly these chicken patties disappear just as soon as they are out of the pan, but you could serve them as appetizers, between sliders as mini chicken sandwiches or as a side for dinner. These are a crowd pleasing treat and seriously try them with that garlic aioli which is all kinds of yum!

If you’re pressed for time, you can cook this recipe right away after it is mixed but if you are patient or want to exercise the make-ahead option, refrigerate the mixture for 2 hours or overnight and the results will be even more juicy and flavorful.
Can I Use Ground Chicken or Cooked Chicken?
YES! We love the texture and juicy bites of diced chicken but you can substitute with ground chicken. A few readers have also reported good results using pre-cooked chicken. You can use what you have on hand for a quick lunch or snack.

Cheesy Chicken Fritters

Ingredients
Ingredients for Chicken Fritters:
- 1 1/2 lbs chicken breasts, (3 large)
- 2 large eggs
- 1/3 cup mayonnaise
- 1/3 cup all-purpose flour, or cornstarch or potato starch for gluten free
- 4 oz mozzarella cheese, (1 1/3 cups shredded)
- 1 1/2 Tbsp chopped fresh dill
- 1/2 tsp salt , or to taste
- 1/8 tsp black pepper
- 2 Tbsp Extra light olive oil, to saute (or any high heat cooking oil)
Ingredients for Garlic Aioli Dip (Optional)
- 1/3 cup mayonnaise
- 1 garlic clove, pressed
- 1/2 Tbsp lemon juice
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Using a sharp knife, dice chicken into 1/3" thick pieces and place them in a large mixing bowl. Tip: If chicken breast is partially frozen, it will be a little bit easier to slice.
- Into the mixing bowl, add remaining batter ingredients: 2 eggs, 1/3 cup mayonnaise, 1/3 cup flour, 1 1/3 cups shredded mozzarella, 1 1/2 Tbsp dill, 1/2 tsp salt and 1/8 tsp black pepper, or season to taste. Stir the mixture until well combined, cover with plastic wrap and refrigerate 2 hours or overnight.
- Heat a large non-stick pan over medium heat and add 2 Tbsp oil. When oil is hot, add the chicken mixture a heaping Tablespoon at a time. Slightly flatten out the tops with the back of your spoon and sauté uncovered 3-4 min on the first side, then flip and saute 3 min on the second side or until outsides are golden brown and chicken is fully cooked through* Repeat with remaining fritters adding more oil as needed.
- To make the aioli (if using), combine all ingredients in a small bowl or measuring cup and stir together until smooth.

Looove the flavor, my kids devoured. My only question is should they fall apart easy or hold together while you eat?? Mine would fall apart pretty quickly so they were hard to dip. I was thinking to add more flour next time but not sure. Either way they are delicious!.
Hi Lisa, they should not fall apart. A good non-stick pan really helps with flipping the fritters so they don’t stick or fall apart. Be sure to fully preheat your pan also. It might also help to chop the chicken finer and also be sure to keep the proportions of liquid to dry ingredients the same so the batter doesn’t end up too loose. Not sure what else will cause that one.
My son and I made these together from your cookbook. They turned out great. I am not good at cooking fried foods, but I can cook these! I want to experiment with adding some ham too and see if I can get that to work.

I’ve made these 3-4 times.. I’ll make and leave in the fridge overnight and cook half one night and Half the next.. Is the chicken supposed to be cooked then cut and marinate with the rest of the ingredients for 2 hours? I’m sorry instructions not clear on if it’s cooked or raw then goes in frigde?

Hi Ana! I don’t recommend skipping it because the mixture needs time firm up so it holds together better when frying. It also allows time for the flavors to meld together.

Hi Heather, it’s noticeable but you can use less or use another herb of your choice, like parsley.

Hi! If you don’t have them on hand you can try beeswax wraps (or vegan wax wraps) or silicone stretch lids / reusable silicone covers.
I have a lot of the raw meat mixture left over. Will it freeze and then thaw ok to fry for next time?
Hi Mari! I haven’t frozen the mixture raw but one of my viewers has and had no problem.
Since I am only cooking for the hubby and myself, I usually freeze 1/2 of the meat mixture for another time. Works great!

We love these chicken fritters but I wonder if these can be baked as a rectangle on a cookie sheet, then cut to fit whatever bun being used? Would baking dry them out?
Hi Jeanne! Here’s what one of my viewers said- “I lined a baking pan w/parchment paper & sprayed w/olive oil (very important to do). After that I used a 2 oz. (1/4 cup) scooper to measure out the mixture & placed it on the pan & slightly flattened it out. I baked @ 375 degrees F for 20 min, turned them over & baked for 20 minutes more. They browned & crisped up nicely.”

Can I use chicken thighs. Instead of chicken breast. My family loves thighs. Would the cooking time change
Hi there, yes that will be fine! Chicken thighs typically take a bit longer to cook through than chicken breasts.If you’re cooking the thighs whole and then shredding, make sure the internal temperature reaches 165°F (74°C) to mak sure that it’s fully cooked.

Hi Julia, yes, that can be a good substitute for chicken. It is a bit leaner than chicken though so you might want to add a bit of oil or adjust the seasonings slightly to your taste. Hope you love it!
