This mushroom gravy is simple, quick and flavorful. It’s also super creamy without any cream in the recipe. That’s right – it’s a skinnier gravy, but you’d never know it! It takes less than 10 minutes to make and you probably already have all of the ingredients in your kitchen.
You’ll never want to go back to store-bought instant gravies with ingredients most of us can’t pronounce! This is our go-to gravy recipe when we cook buckwheat and want our son to eat it. He loves his gravy and mushrooms. It’s also really good over mashed pow-taters. We think you’ll love it!
Ingredients for Mushroom Gravy:
1/2 lb fresh button mushrooms (white or brown), sliced
1 Tbsp olive oil
2 Tbsp unsalted butter
2 Tbsp all-purpose flour
1/2 cup chicken stock/broth (veggie or beef stock work also)
1 cup milk (use whatever kind you have)
Salt and pepper to taste
How to Make Mushroom Gravy:
1. Rinse mushrooms (yes, I rinse my mushrooms), then pat them dry with paper towels and slice. Heat a large skillet over medium heat and add 1 Tbsp olive oil. When oil is hot, add mushrooms and sautee until golden and soft. Remove mushrooms from pan.
2. Add 2 Tbsp butter to pan along with 2 Tbsp flour. Whisk until your flour roux is a light golden brown (1-2 min).
3. Whisk in 1/2 cup stock then 1 cup milk and stir until hot and thickened.
4. Add the mushrooms back to the pan, season with salt and pepper to taste and bring to a simmer. When gravy is at desired consistency, remove from heat (keep in mind it will still thicken slightly as it cools).
Enjoy it over buckwheat or these perfect mashed potatoes! Mmmm. Comfort food :).

I use this recipe often. It is so simple but tasty. Sometimes I do not use the mushrooms and just use the gravy for potatoes or what ever. Thank you for sharing this recipe.

Very good! I had some left over chicken and mashed potatoes and was looking for a good way to serve them. I made this, added the chicken to the gravy and served over the mashed potatoes with peas. Next time I will some herbs for a little more flavor.

Is there a substitute for flour that would be good for this recipe? I’m cooking dinner for someone who has celiac, and have been having a hard time finding gluten substitutes.
Lina, gluten free flour can be used well instead of regular all-purpose flour.
Hi. I made this up tonight fir something special as we’re a day away from having our new baby girl. I didn’t have all the right things so had to improvise a tad. Still turned out wonderful sauce. Wife has now said I’ll be doing that again. I used peanut oil and cornflour. I added a bit more milk to keep it creamy and not too thick. So thanks fir the great recipe. 😉

I use it with chicken and the first time I did so my dear wife had a rummage around looking for an empty jar! Such was the quality, my wife commented it was the best sauce she’d ever tasted! I think I love you. Ive been racking my brain trying to think what to do with the chicken we have for our tea tonight with very scant ibgredients. We have mushrooms (59p reduced) so this is tonights tea sorted 🙂

I’m usually not impressed since too many recipes don’t live up to their claims, but this one actually blew me away. It truly was both very simple and extremely flavourful. I will definitely use this as my base every time, but will vary with other flavours (garlic, rosemary, thyme…) This recipe deserves 5 out of 5 for sure, which I don’t think I’ve ever done before.
P.S. And I’m French, not Ukranian. Recognized the classic French roux, but the simplicity of sauteing the mushrooms and adding just a bit of broth (which also can be varied) and adding it after really created a lot to the richness. The creme is definitely not needed. Neither the butter! I actually tried this with margarine and it was still so tasty. Merci!!
