Everyone in our family loves these and I love how fast and easy they are to make. You will love that they are make-ahead and freezer friendly. The fluffy egg, cheese, and meat all reheat just as good as the day they were made. Check out our reheating tips below for keeping that exterior crisp.

Ingredients for Egg Quesadillas:
The ingredients are so simple that you will have this recipe memorized by the time you are finished watching the video tutorial. For the basic egg quesadilla, you will need an 8-inch flour tortilla, 2 large eggs with a pinch of salt and pepper, and 1/4 cup of Mexican cheese (or your favorite melting cheese like cheddar or mozzarella).

You can add extra protein and our favorites are breakfast sausage. If you aren’t able to find the sausage patties, you can buy breakfast sausages and remove the casing. Bacon is always a favorite for a bacon egg and cheese quesadilla. Ham is convenient because you don’t have to pre-cook the meat and can use leftover Baked Ham.

What to Serve with Breakfast Quesadillas:
Quesadillas are great by themselves but we love to serve them with these fresh toppings like Pico de Gallo and our Roasted Salsa. Our children love them with sour cream.

How to Freeze Quesadillas:
To Freeze – Arrange quesadillas in a single layer on a baking sheet lined with parchment paper and flash freeze for 2 hours. Once they are solid, transfer to a freezer-safe zip bag and store in the freezer.
To Reheat – Place frozen quesadillas into a toaster oven at 350˚F and reheat until warmed through and cheese is melted. We love reheating in an air fryer to re-crisp the outside. If you thaw quesadillas in the refrigerator for a couple of hours or overnight, they will reheat twice as fast.

Breakfast Quesadillas Recipe (3 Easy Ways)

Ingredients
Ingredients for 1 Breakfast Quesadilla:
- 1 flour tortilla, 8” in diameter
- 2 large eggs
- 1 Pinch salt and pepper
- 1/4 cup shredded cheese, (1 oz) Mexican cheese, medium cheddar or mozzarella
Select Your Meat/ Protein:
- 3 oz breakfast Sausage, 2 patties
- 2 slices ham, (2 oz) chopped
- 2 slices bacon, (2 oz), sliced
Instructions
- Heat a non-stick pan over medium heat. Cook Sausage or Bacon until browned and cooked through then remove to a plate. If using cooked ham, you can heat it up or just add it over the cheese in step 4. Wipe excess oil from skillet if needed. Reduce heat to low.
- In a measuring cup, add 2 eggs with a pinch of salt and pepper, or add seasoning to taste. Beat with a fork. Add beaten eggs and swirl to spread evenly over the bottom of the pan. Cook over low heat until When eggs are nearly cooked through (if you tilt the pan they shouldn't run).
- Sprinkle the top with 2 Tbsp shredded cheese then cover with a tortilla. The cheese will make the tortilla stick to the egg. Use a large spatula to get under the egg and quickly flip over.
- Sprinkle another 2 Tbsp of cheese or add cheese to taste. Sprinkle your cooked protein (sausage, bacon or ham) over half of the surface and fold the tortilla in half. Sautee on both sides until golden brown.* Remove from skillet and use a pizza cutter to cut quesadilla into wedges and serve warm.

Hi, that should still work fine, but I would pre-toast the first side of the corn tortilla that touches the egg. Corn tortillas have a different texture and are a little more likely to crack when folded but if you prefer that texture, I think it would work fine.
The way you make the egg stick to the tortilla is genius! Much easier than cooking them separately. I like to add a teaspoon of water to my eggs, it makes them fluffy. Also trying adding fresh chopped chives when you add toppings at the end.

Found your recipe this morning and had to give it a try. It tasted amazing and was so easy to make! I made them with bacon and more cheese than called for. All I had for dipping was picante sauce, which was an added yum. This recipe was keto for us, since I had carb smart tortillas. Love it! Will make again and again!!

This looks like another winner. Recently bulk sausage was on sale, and I took the same approach I do with ground beef: I cooked 6 pounds in my slow cooker (used a disposable liner for easier cleanup) drained the meat in a colander, broke it up, then divided it up into meal portions and froze it in freezer bags. Using precooked crumbled sausage would make this recipe even easier!
