Why I Don’t Skip Breakfast
I find that when I skip breakfast, I run out of steam quickly and end up snacking on something junky before lunch. A hearty breakfast will break your ‘night fast’, fuel your day, and curb unhealthy snack cravings. This is a great (and EASY) recipe to have in your repertoire for busy and hurried mornings.
Pro Tip: If you pre-cook your bacon (or try our quick Air Fryer Bacon Recipe), you can have this recipe plated in less than 15 minutes.
Ingredients for Breakfast Tortillas
- Tortilla – use a large burrito-sized tortilla (about 10″ diameter)
- Bacon – I use 1 1/2 pieces of cooked bacon per tortilla. You can substitute with cooked sausage and if you don’t have time to cook the bacon, use your favorite deli meat.
- Egg – cook 1 scrambled egg per tortilla. Adding more eggs will make it difficult to close the tortilla.
- Avocado – you’ll mash half of an avocado with a fork. Avocado adds nice moisture to the tortilla wrap.
- Cheese – Mozzarella, cheddar, or shredded Mexican cheese all work great. I love a good cheese pull in my breakfast tortilla.
How to Make TikTok Breakfast Tortilla
- Cook the Bacon – Cut bacon strips in half and you can bake, saute or Air Fry Bacon until crispy. Bacon can be cooked ahead.
- Scramble an Egg – Crack an egg into a bowl and beat with a fork. Season lightly with salt and pepper then saute on a buttered skillet just until cooked through. (I use the same skillet to scramble the egg then sautee the folded tortilla – there’s no need to rinse the pan).
- Mash 1/2 avocado in a bowl with a fork and season with salt and pepper to add more flavor.
- Cut a slit into the side of the tortilla closest to you, cutting just up to the center.
- Arrange ingredients into 4 quadrants on the tortilla (Bottom right: Eggs, Top Right: Bacon, Top Left: Avocado, Bottom Left: shredded cheese).
- Fold tortilla – fold the bottom right quadrant up, then proceed to fold the quadrants over each other to form a triangle.
- Sautee – Heat a small non-stick skillet over medium heat and melt in some butter. Sautee the folded tortilla until golden brown and crispy on both sides, adding more butter to sautee the second side.
Pro Tip: Using a great non-stick skillet makes it easy to keep this a one-pan recipe. You can start with cooking the bacon, wipe down the skillet then scramble the egg and use the same skillet to saute the wrap.
Serve With
This breakfast tortilla wrap is a meal in itself and really doesn’t need much unless you want to make it saucier or spicier. These are our favorite toppings:

We eat this every couple of months for dinner. It’s so good! It works great with my dairy-free cheese.

Why couldn’t you just add the fresh avocado after you thaw!!!

use caramelized onion instead. Freeze. then when ready, 1 min microwave to cook, then cast iron fry pan, to toast. No butter or oil needed!
AWESOME breakfast wrap, but I’ve cut carbs down on mine by using the Mission Carb Smart tortillas at only 5 net carbs per/wrap. Thus making my recipe: a total of 9.5 net carbs!
