Fresh Strawberry Cake (VIDEO)

This fresh strawberry cake is definitely a reader favorite! Completely charming, not overly sweet and tastes bakery quality. Video tutorial makes it easy! | natashaskitchen.com

F-I-N-A-L-L-Y!!! One of the most popular cake recipes on our blog now has a VIDEO tutorial! This fresh strawberry cake is loaded with 1 1/2 pounds of fresh strawberries and is definitely a reader favorite! It’s simple to make and doesn’t require a very long list of ingredients. Of course it uses my all-time favorite cake base (a 4-ingredient European sponge cake).

I want you to experience this cake and succeed every time so I made a video recipe for you all :). This is also one of my personal favorites because:

(1) It’s cute as can be with the accidental old world chocolate and strawberry decor

(2) it’s not overly sweet as is hallmark of my desserts (We love our sweets but we also love to experience all the flavors of the cake, not just the sugar ?).

Oh and (3) it tastes bakery quality (I would argue better because it’s homemade!)

Natasha, I made the Fresh Strawberry Cake. This cake is so easy to make and is absolutely delicious!!! My friends were so impressed with the freshness, the fact it wasn’t real sweet, and the chocolate was perfect. Many of my friends asked for the recipe. Thank you for placing your recipe online. This recipe is a keeper! Awesome!!! Reply

    Hello Natasha,

Juzt made this cake but with raspberries. I think it will be as delicious as with strawberries. Reply

Can this cake be made with two tall tiers (two nine inch cakes on the bottom and then two six in cakes on the top) as a wedding cake? Also, can the fully iced and decorated cake be frozen? I wouldn’t have the strawberries on top, just the white icing. Then after thawing, we would decorate it with fresh flowers for the wedding. Thanks. Reply

Hi Danielle, I haven’t tried that with this particular cake but one of my readers wrote in saying that she made a tiered cake with this cake base so I think it might work. It was a rustic looking cake though and this particular cream is fairly soft and not stiff like a buttercream, so I’m not sure how well it would hold up on a tiered cake. Reply

I made this cake and it came out perfect.
I was wondering how long does it last in the refrigerator. Reply

Hi Elizabeth, it lasts as long as your strawberries do. I would say 2 to 3 days covered and refrigerated. Reply

Can this be made as a rectangle? A circle cake isn’t large enough for the crowd I’m having. Reply

Hi Rosemary, for a rectangular cake, you will need to increase the ingredients. Here is the rectangular version with detailed instructions. Reply
