Homemade Apple Turnovers with a filling that tastes like Apple Pie in flaky puff pastry dough. Watch the video tutorial and you’ll know just how easy these are.

We love apple recipes like Baked Apples, or Apple Cake. This is one of the easiest apple desserts and can even be made ahead and frozen.

Apple Turnover Recipe:

This Apple Turnover Recipe doesn’t get any easier! You can make bakery-quality apple turnovers with just a couple of storebought frozen sheets of puff pastry, apples, butter, an egg, and a few pantry staples.

Keep in mind the pastry itself isn’t sweet so do not skip the glaze. It makes these turnovers irresistibly good.

Ingredients for apple turnovers with puff pastry, granny smith apples, butter, egg, sugar, salt and cinnamon

What is a Turnover?

Turnovers are made by filling pastry dough (usually puff pastry) with a sweet or savory filling, sealing the edges and baking. It becomes a portable dessert (like a hand pie), or a type of baked sandwich with a savory filling. Biting into an apple-filled pastry on the go is a real treat.

Can you Freeze Apple Turnovers?

After the pies are fully assembled (before brushing tops with eggwash), freeze them flat on a lined baking sheet then transfer to a freezer-safe Ziploc bag. When ready to bake, arrange them frozen on a baking sheet (do not thaw), brush with some egg wash and bake at 400˚F for 23-25 minutes.

How to Keep Apple Turnover Filling from Leaking?

No matter how well you crimp the edges, there will always be at least one turnover that leaks filling out of the edge and that is normal. A few things that help reduce leaks:

  • Egg Wash will help keep the dry pastry together
  • Crimp Tightly all along the edge where the two sheets come together
  • Refrigerate turnovers for 20 minutes before baking

What Can You do with Lots of Apples?

If you have tons of apples in Autumn, you can put them to great use by making Apple Sauce or baking up these memorable apple desserts:

Two apple turnovers on a plate with apples in background
Homemade Apple Turnovers with a filling that tastes like Apple Pie in flaky puff pastry dough.
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes

Ingredients

Servings: 8 people

Apple Turnover Ingredients:

  • 1 lb puff pastry, (2 sheets) thawed according to package instructions
  • 1 Tbsp all-purpose flour, for dusting
  • 1 1/4 lb Granny Smith apples, (3 medium) peeled, cored and diced into 1/3" thick pieces
  • 1 Tbsp unsalted butter
  • 1/4 cup brown sugar, lightly packed
  • 1/2 tsp ground cinnamon
  • 1/8 tsp salt
  • 1 egg+ 1 Tbsp water for egg wash

For the Glaze:

Instructions

  • Preheat Oven to 400˚F. Remove puff pastry from the freezer and thaw according to instructions while making and cooling the apple filling.
  • In a medium pot, melt 1 Tbsp butter over medium heat. Add diced apples and cook, stirring occasionally until softened (5 min).
  • Reduce heat to low and stir in 1/4 cup brown sugar, 1/2 tsp cinnamon, and salt. Continue to simmer 3 minutes until apples are soft and caramelized. Remove from heat and set aside to cool.
  • Use a rolling pin to roll the first sheet of thawed pastry to an 11" square. With a pizza cutter, cut into 4 equal-sized squares. Place cooled apple mixture over half of each square, leaving at least a 1/2" border.
  • Thoroughly Beat together 1 egg and 1 Tbsp water. Brush eggwash lightly on edges of the pastry (just enough to seal), bring the edges together and crimp tightly along the edges with a fork to seal. Repeat steps 4 and 5 with the second sheet of puff pastry to make 8 turnovers.
  • Transfer to a parchment-lined baking sheet, keeping them at least 1" apart. With a paring knife, cut 2-3 small slits in the top of each turnover.* Brush the tops with egg wash and bake 20-23 minutes or until golden and puffed.
  • While turnovers are still warm, stir together powdered sugar and heavy whipping cream (adding to your desired consistency) and drizzle glaze over turnovers.

Notes

*To reduce the chances of filling leaking out of pastries, refrigerate uncovered for 20 minutes before brushing with egg wash and baking (this step is optional).

As for the people that are saying these horrible things about you,
Well I think it is best to ignore these people, as they resemble the fly that only seems to know where the garbage is and is oblivious to the Beautiful flowers that are around.
Best to only focus your energy on the Bee’s kind of people, who only know where the Beautiful flowers are & not the garbage.
Thankyou for having such a Wonderful Food Blog with recipes that are consistently good & delicious.

I can’t wait to try these! My husband will love the Apple filly, but wondering if you have ever experimented with a cream cheese filling – something like doing a strawberry, raspberry or cherry cheesecake filling? An assortment would be a lively brunch idea!

Hi Jenna, you might try using the filling in our danish recipes. We have several like the peach cream cheese danish or simple cream cheese danish with a lemon glaze that could work well in these turnovers also.

Hi Tanya, the key is to cut it to even squares which makes them easy to fold over.
