Baked Buffalo Chicken Wings

The beauty of baked buffalo chicken wings is that you can get the same, crispy texture without the need for splattering hot fryer oil. Using our handy baking powder trick and a wire rack, they get a wonderful crust with a fraction of the fat of deep-fried versions. Tossing the crispy wings together with a buttery, tangy buffalo sauce is irresistibly good.

Ingredients for the Crispiest Buffalo Chicken Wings

  • Chicken wings – Use fresh or thawed frozen wings that are broken down into drumettes and wingettes 
  • Baking powder – The secret ingredient for getting your chicken wings ultra-crispy without the need for deep frying 
  • Salt – we use fine sea salt in nearly all of our cooking
  • Garlic powder – adds a bit of zest to your wings before tossing them in the buffalo sauce 
  • Unsalted butter – adds a nice creaminess to the buffalo sauce 
  • Frank’s Original Red Hot Sauce – This is the perfect base for your wing sauce. It’s tangy, a little sweet, and has just the right amount of spiciness.
  • Sugar – helps the sauce caramelize and thicken on your piping hot wings.

How to Make Crispy Buffalo Wings

  1. Prep Chicken Wings – cut wings in half to separate the drums from the wingettes. Pat the wings dry with a paper towel. Preheat the oven and line a rimmed baking sheet with foil and place a wire rack over the pan.
  2. Make dry seasoning – Combine baking powder, salt, and garlic powder. 
  3. Season the wings – Place the chicken wings in a large mixing bowl and toss them in the dry seasoning until well-coated. Assemble the wings in a single layer over the rack.
  4. Bake in the center of the oven for 50 minutes, flipping halfway.
  5. Make the Buffalo Sauce – In a medium bowl, stir together melted butter, sugar, and hot sauce.
  6. Toss Wings in Sauce – Transfer chicken wings to a bowl, and toss, drizzle with sauce and toss to coat. Serve with your favorite sauce.

Tips for the Best Buffalo Wings

  • Remove moisture – pat dry with paper towels to remove as much moisture as you can to ensure they turn out crispy.
  • Use baking powder – The baking powder creates such an incredible crust on the wings. It’s a must! 
  • Bake on a rack – A wire rack allows the wings to circulate and makes them crispy all around. 

How to Serve

  • Restaurant Style – We love to serve buffalo wings as they do at Chilis restaurant alongside some chunky blue cheese dip and celery sticks.
  • Avocado Ranch – this dressing is also an amazing dip for buffalo chicken.
  • Jalapeno Ranch – if you want a spicy kick to your sauce as well, adding jalapeno adds just the right amount of heat.
  • Add fries – you can turn this into lunch by serving with crispy Air Fryer French Fries.

Common Questions

How do you know when chicken wings are done?

The temperature and timing should be adequate, but you can always use a thermometer to check the internal temperature of the chicken (at least 165˚F and tastier if 175˚F).

Can you use frozen chicken wings?

You can, but be sure to thaw completely before baking, or they won’t crisp up properly.

How can you make the wings spicier?

Add in a teaspoon of cayenne pepper or black pepper to the dry seasoning for a spicier wing.

Can I make these in the Air Fryer?

Instructions

  • Thoroughly pat dry the chicken with a paper towel. Preheat the oven to 450˚F. Line a rimmed baking sheet with foil and place a wire rack over the pan.
  • Combine the baking powder, salt and garlic powder in a bowl, sprinkle over the chicken and toss to combine. Arrange chicken on the prepared wire rack.
  • Bake the chicken for 25 minutes, flip it over and bake for another 25 minutes or until crisp and cooked through.
  • In a medium-size bowl combine sauce ingredients. Remove chicken from the baking sheet to a bowl. Drizzle the sauce over the chicken. Toss to coat the chicken in the sauce. Serve with your favorite dipping sauce.

    I was scared to try the recipe with baking powder but thought after so many 5 star reviews it’s got to be good! Wrong! Absolutely horrible as all I could taste was baking powder. And not only me – but all guests. Followed recipe exactly to the T and I’m very experienced and good cook so no way I could’ve done something wrong. Were wings crispy? Yes. Was it worth to

      Hi Alisa, you should not be tasting any baking powder. Did you use aluminum free? Also, make sure you don’t substitute with baking soda because that would taste very wrong.

    I ordered the Frank’s hot sauce online just for this recipe (not available in stores in my country).
    I followed the recipe almost to the letter – I just didn’t add sugar to the hot sauce and butter mixture, but a pinch of pepper and garlic and I added 2 Tbsp of flour to baking powder.
    I baked the wings in the air-fryer (I had 1 kg wings for 3 people) for about 24 minutes on 220°C (I turned them around a couple of times). I don’t really like this hot sauce by itself, but it goes great with wings. Even my husband who doesn’t like poultry said they were great.
    Great recipe! Wings were truly crispy.

    This is great. I cooked wings just a little longer so they were extra crispy and also I played with the sauce. I added brown sugar, sriracha and tiny bit of ketchup. So so good. Thanks for this great recipe.

      Hi Tjasa, you may try another brand of hot sauce, as a test, you might taste a little bit of hot sauce out of the bottle to see if it has a kick to you to begin with and to your liking. The hot sauce is where the spice comes from in this recipe.

      I have the same problem re Frank’s availability. Try Googling “Homemade Buffalo sauce without Franks”, and you can find a great sauce recipe that is almost exactly the same. That sauce, plus following this recipe makes great wings (if Frank’s is not available where you live). BTY, I’m sure I could find Frank’s online, but it would cost a small fortune. Plus, I enjoy cooking, and don’t mind spending extra time to make my own sauces. This is a great recipe I’ve used several times. I was just reviewing it because I’m fixing to make a batch of Buffalo wings today.

    I must have done something wrong since these were the worst wings that I have ever made or had both in terms of the texture and flavor but especially the flavor since buffalo wings should have a little kick to them. I do a lot of cooking but can’t figure out what I could have done wrong. Next time I am going to fry the wings using a cast iron.

      Hi David, did you change anything in the ingredients? Did you possibly purchase a mild hot sauce? Franks original does have a kick to it. Also something to consider – are you tasting food ok otherwise? As a test, you might taste a little bit of hot sauce out of the bottle to see if it has a kick to you to begin with).     Definitely the best recipe for Buffalo wings. However I added an additional 3 tbsp of brown sugar just to cut the tanginess of the vinegar in the hot sauce. Definitely will make again.

    The wings were delicious. However at 16 minutes they were RAW inside. Everyone should check their wings as each air fryer is different.
    Andddd I understand the recipes are free because of the ads but it’s hard to read them or make comments because the page is constantly jumping to a video.
