Lasagna Roll Ups Recipe (VIDEO)
Lasagna Roll Ups combine the best of classic Lasagna but are much easier to serve, bake faster and can be enjoyed right away – no resting time required! They are make-ahead, freezer-friendly, and reheat well.
We love comforting pasta dishes like Chicken Tetrazzini, traditional Spaghetti and Meatballs and Mom’s Chicken Alfredo. These are among the most requested meals in our family. Try this Lasagna Roll-Ups recipe and you will make it over and over.

Lasagna Roll-Ups:
We love lasagna in all forms including Skillet Lasagna, make-ahead Slow Cooker Lasagna, and of course Classic Lasagna. These Lasagna Roll-ups are beefy, saucy, cheesy and definitely satisfy the craving for lasagna, but they are way easier to serve. No more messy lasagna squares sliding apart as you struggle to remove them from the pan.
The Ultimate Cheese Sauce:
We make a 3-cheese sauce with ricotta cheese, shredded mozzarella, and parmesan cheese. Once the sauce is baked, it tastes almost like an alfredo sauce – rich, creamy, and cheesy.
Beefy Lasagna Meat Sauce:
The best meat sauce for lasagna is essentially a ragu – a meat sauce with ground beef, onion, seasonings, and marinara. We don’t skimp on the meat and use a full pound of ground beef which makes this lasagna supremely satisfying. You can use homemade marinara or your favorite store-bought marinara.
Can I Substitute the Ground Beef?
You can swap out the ground beef for Italian sausage or use ground turkey or ground chicken if you want a leaner lasagna.
How to Make Lasagna Rolls:
The process here is simple and you have all the elements of a classic lasagna but they are rolled rather than layered. This results in 12 perfectly portioned servings of lasagna. It’s brilliant for parties! The process for lasagna rolls is simple:
- Cook the noodles
- Make the meat sauce and spread 1/2 cup in a 9×13 casserole
- Make the cheese sauce
- Spread cheese sauce and meat sauce on each noodle.
- Roll up noodles, transfer to the casserole dish, spread with remaining meat sauce and mozzarella, then cover and bake.
Tips for Assembling Lasagna Roll-Ups
- Cook 2-3 extra noodles as some may break while boiling.
- Cook noodles according to package instructions in salted water until al-dente (do not over-cook). We use about 3 Tbsp salt for a large soup pot of water.
- Drain cooked noodles then cover them with cold water until ready to use so they don’t stick together.
- To contain the mess, arrange the noodles 6 at a time on a rimmed non-stick baking sheet (keeping remaining noodles in cold water until ready to use).
Can I Make Lasagna Roll-Ups Ahead?
There are 2 options to make these lasagna roll-ups ahead of time.
- Fully assemble and bake, then cool to room temperature, cover, and chill. To serve, reheat portions in the microwave or oven until roll-ups are heated through and cheese is melted.
- Fully assemble roll-ups in a casserole dish (without baking), cover tightly with foil and refrigerate overnight or freeze up to 3 months. Bake refrigerated lasagna roll-ups at 375˚F for about 45 minutes. Bake from frozen at 375˚F for about 1 hour.

Lasagna Roll Ups Recipe (VIDEO)

Ingredients
- 12 lasagna noodles, cooked to package instructions
- 16 oz ground beef, 85% lean
- 24 oz marinara sauce
- 1/2 cup diced onion
- 3 garlic cloves, minced
- 1 tsp sea salt, or to taste for red sauce
- 1/2 tsp black pepper, or to taste
- 1/2 tsp dried oregano
- 15 oz ricotta cheese
- 1 large egg
- 1/4 cup parmesan cheese, shredded
- 3 cups mozzarella cheese, shredded, divided
- 1/4 cup parsley, chopped, plus more to garnish
Instructions
- Preheat oven to 375˚F. Cook noodles in a large pot of salted water according to package instructions then drain and fill pot with cold water to stop the cooking process and keep noodles from sticking together.
- In a deep pan or dutch oven, over medium-high heat, cook ground beef until no longer pink, breaking up with a spatula (2 min). Add onion and cook until softened (3 minutes). Add garlic, 1 tsp salt, 1/2 tsp pepper and 1/2 tsp oregano and sautee another minute. Add marinara, bring to a simmer and turn off the heat. Spread 1/2 cup meat sauce over the bottom of a casserole dish
- In a large bowl, stir together: ricotta, 1 egg, 1/4 cup parmesan cheese, 1 1/2 cups mozzarella cheese and 1/4 cup parsley.
- To contain messiness, arrange noodles over a large baking sheet in a single layer. Spread 1/4 cup (1 scant ice cream scoop) of cheese mixture over the top of each noodle. Add a heaping Tbsp of meat sauce in a strip down the center of the noodle. Roll noodles up and arrange in the prepared casserole dish.
- Spread remaining meat sauce over the tops of roll-ups and sprinkle on the remaining 1 1/2 cups mozzarella cheese. Cover with foil, making sure foil isn't touching cheese (if your pan is on the shallow side, you can put toothpicks into rolls to keep the foil away from cheese.
- Bake covered at 375˚F for 40 minutes. Remove foil and broil another 2-3 minutes or until cheese is lightly golden. Garnish with parsley to serve.

For your lasagna rollups, if I use your homemade Marinara recipe, it has 1/2 an onion and 3 cloves garlic. The rollups also have 1/2 an onion an 3 cloves garlic. Is this in addition to what’s in the marinara sauce?
Hi Bret, the extra onion and garlic adds great flavor to the sauce but you can omit it and it will still taste great with just the homemade marinara since it has it in there.

Super delicious and easy to follow recipe! A little trick about the aluminum foil sticking to the cheese…spray the foil with a nonstick cooking spay such as Pam and no cheese sticks. 🙂

These were amazing! Definitely a hit for all of my family. My 18 month old had 4 servings of it and was asking for more. I think it would be easier to set up the noodles on a cutting board and add the cheese and meat instead of doing it in the pan. That got a little difficult to do when the pan got fuller. Otherwise, this will definitely be a regular in my weekly meal plan list!

I make homemade noodles for my lasagna, do it still need to cook them before I assemble the rolls?
Hi Debra, some noodles require some quick pre-cooking. I would follow the package instructions. They do need to be pliable to roll.

So I made 2 trays, one with the meat sauce and followed the recipe exactly, it was delicious! I added spinach to the cheese mixture and used plain marinara sauce to top it, it was good but maybe needed a little seasoning.

Hi Naima, someone has reported using no-boil or oven-ready lasagna noodles and cooking them a few at a time in boiling water for 30 seconds then laying them out on a kitchen towel and used them that way.

Hi Natasha: It’s probably too late to ask this question, but it will help for the next time. I’m about to make these for Christmas Eve. I already made the marinara sauce (which has onion, garlic, salt, pepper, and oregano). Do I still add the onion, garlic, salt, pepper, and oregano as listed in the roll-up recipe? Or are the ingredients that are now in your marinara sauce sufficient? Thank you. Love your recipes! Doris
HI Doris, you could add them but be careful adding salt and add that to taste. You could also leave them out as homemade marinara will have great flavor allready.
Made these this evening. Overall not bad, but (1) even though I used the exact amounts called out in the recipe, I ran our out of cheese filling and was only able to fill 11 instead of 12…, and (2) the 11 that I did bake turned out a bit dry. I think I will pick up some additional sauce at the store tomorrow to “sauce up” the left-overs. I happened to buy way too much mozzarella, so I’m confident with some tweaking the leftovers will tide us over well this holiday week. 🙂
I had leftover pasta sauce from the weekend and decided to use it to make this recipe. The recipe was so easy and delicious. Husband loved it too. He even asked for leftover roll ups in a couple of days. Big hit. This one is going in the binder. I will never make traditional lasagna again. Always happy to find new recipes.

Hi Maggie, I haven’t tried the chicken lasagna in the rolled style. I think it would work but you might have a little extra sauce and would probably need a little less chicken unless you just ended up making a few extra rolls to squeeze into the pan. I would probably simmer the white sauce a little longer to get it to thicken up a bit more.

I have used ricotta cheese instead of cottage cheese, but I’ve used cream cheese too. Give that a try.

Hi Natasha. The first time I made this, it came out creamy cheesy but I used non organic shredded mozzarella cheese. But the last few times I’ve used organic shredded mozzarella and it’s not creamy at all. Do you think the organic cheese has a different consistency?

These are great. Since it is just my husband and me home now, if I make the smallest pan I have of lasagna, seems like we are eating it forever. These work out great as I make them up take out what we need for supper and then let them get cold in the fridge ( easy to bag them)before bagging them up 2 per package and freeze. Then if he want lasagna for lunch or supper I can just take out a pk. They work and taste great.

First attempt in making lasagna, it was delish! I do agree some extra marinara sauce would be handy for leftovers. I was able to use the oven ready lasagna noodles. Boiled them for 5 mins to get them soft enough to roll. Somehow I ended up with extra cheese sauce, any suggestions on what to make with it?
Hi Carla, you can spread it over the noodles also before the rest of the toppings. If you have large shells? I haven’t really tried it in anything else to advise.
