Zuppa Toscana – Olive Garden Copycat (VIDEO)
Zuppa Toscana is Olive Garden’s most popular soup. This one-pot, homemade Zuppa Toscana recipe is hearty and loaded with Italian sausage, kale, bacon and potatoes.

Zuppa Toscana Copycat Recipe:
We love re-creating restaurant quality soups at home like our popular Clam Chowder Recipe. My sister Tanya taught me how to make this Olive Garden Zuppa Toscana and it has been a family and reader favorite since we first published it in 2010. We have since made it heartier and more flavorful. The classic just got better!
What is Zuppa Toscana?
Zuppa means soup and Toscana means Tuscan. Tuscan Soup! It is classically made with kale, potatoes, onion, and garlic then served topped with cheese.
Is Zuppa Toscana Spicy?
We use “Hot” Italian sauce which does give this soup a spicy kick but you can substitute with medium or mild Italian sausage and make a less spicy version then season with salt and pepper to taste.
Do I really need 1 HEAD of Garlic?
YES! We used a full head of garlic (about 10 large cloves). Do not skip the fresh garlic. Garlic gives the broth incredible and authentic Italian flavor. Since the garlic is sautéed, then simmered with the broth, it doesn’t overwhelm the soup. Garlic is also very good for you (a super food)!
Is Zuppa Toscana Healthy?
This soup is naturally gluten free and grain free. To make a Keto-friendly Zuppa Toscana, you can substitute potatoes with cauliflower.
For Whole 30 (dairy free), substitute the heavy whipping cream for 1 can of full fat unsweetened coconut milk (using the solid white cream portion only and adding it at the very end just to heat through).

Zuppa Toscana - Olive Garden Copycat
Homemade Zuppa Toscana is loaded with Italian sausage, bacon, kale and potatoes. Learn how to make Zuppa Toscana soup as made popular by Olive Garden!
Ingredients
- 6 oz bacon chopped
- 1 lb Italian Sausage The "Hot" variety
- 1 medium head garlic 10 large cloves, peeled and minced or pressed
- 1 medium onion finely diced
- 4 cups chicken broth/stock (32 oz)
- 6 cups water (48 oz)
- 5 medium russet potatoes peeled and chopped into 1/4" thick pieces
- 1 kale bundle leaves stripped and chopped (6 cups)
- 1 cup whipping cream
- Salt and black pepper to taste
- Parmesan cheese to serve optional
Instructions

In a large pot or dutch oven (5.5 qt), over medium-high heat, add chopped bacon and sauté until browned (5-7 mins). Remove to a paper-towel lined plate and spoon out excess oil, leaving about 1 Tbsp oil in the pot.

Add Italian sausage, breaking it up with your spatula and sauté until cooked through (5 min). Remove to paper towel lined plate.

Finely dice onion and add to the pot. Saute 5 min or until soft and golden then add minced garlic and saute 1 min.

Add 4 cups broth and 6 cups water, and bring to boil. Add sliced potatoes and cook 13-14 min or until easily pierced with a fork.

When potatoes nearly done, add chopped kale and cooked sausage and bring everything to a light boil.

Stir in 1 cup cream and bring to boil. Season to taste with salt and black pepper then remove from heat. Garnish with bacon and grated parmesan.

All I had was sweet Italian sausage But husband doesn’t like spicy. So wld u suggest I add some paprika to it.

I don’t like sausage can u use any other meat or just omit it?
Hi Jennifer, I haven’t tested a substitution, but trying plain ground meat like ground turkey or chicken will make the overall soup taste more like a meatball soup than Zuppa since you would be lacking the spiciness. I would suggest adding some spice since the sausage is a spicy sausage.
I tried a different recipe, but I use this Only now and have been making it for the last few years. It’s my go-to soup (other than borscht) About a year ago, my husband and I started dating & this was the first meal I made for him. So not to give you credit Natasha, but it might have sealed the deal it’s our favorite!

Are the serving sizes for adults? I need to feed 6 adults this and 3 of them are heavy eater men. I’m making bread as a side but what are your thoughts? Would the original recipe for 8 feed everyone dinner?

You could but it would just be more hearty if you didn’t add more liquid so it’s up to you, but if you do, make sure to adjust seasoning accordingly since just adding water can make it bland. Broth would be a better choice.
Hello Miki, Yes, the serving size is for adults. If they are heavy eaters you can add more, just click on the number of sercings to adjust the ingredients.

Hi Jenny, I have not tested that but here is what one of our readers wrote ” I usually make zuppa in a slow cooker and it tastes great! I just saute the garlic and onions and sausage on the stove first and then put all the ingredients (except the heavy cream) into the slow cooker for several hours and then add the cream in right at the end!” I hope that helps.

Hi Kate, I haven’t tried freezing it but one of my readers froze it and shared the following helpful info: “I froze the remaining soup in individual servings using freezer bags and this soup is just as delicious the second time around!”
I freeze this soup all the time! I usually make a triple recipe so I can freeze some for later… It’s as good, or better!
My husband thinks that he does not like Kale, is there a substitute?
How about spinach? I think that’s a good one.

Hello if I’m using preminced garlic in a jar how much would I use also I’ve got a bag of kale would a bundle be equal to about 2 cups??
Hi Katherine, I would follow the conversion on the bottle to match per clove. Most bottle show a single clove of garlic is equal to 1/2 teaspoon of minced garlic, which is the same as 1 teaspoon of chopped garlic. I hope that his helpful.
Just made this tonight and it turned out great. I added one and a half pounds of sausage for a more meaty flavorful soup and it worked. My husbad went to the store to get the stuff for it and accidentally got Silk dairy free heavy whipping cream and it still tasted amazing so thought I’d share for anyone with a lactose sensitivity…my boys like it so much they are actually quiet lol, wish it would let me share a picture it looks awesome!

to make this lower sodium, could you just use lower sodium broth and have it taste similar, salting as needed when you make a bowl?

Tried it today. We didn’t have bacon, so substituted sliced prosciutto and reversed the order, sausage first, then prosciutto, so as not to overcook that. Still turned out excellent. Definitely making this again

I’ve made this countless times as it happens to be my daughter’s favorite. I make this with whatever ground meat I have in hand and just add some spice and red pepper flakes for the kick. Love that it is naturally gluten free. Also, I make this dairy free by substituting cream for coconut milk. It tastes wonderful and the change is so subtle you can barely tell under the aromas of garlic and meat.

We enjoyed the soup. Used a 10 oz bag of Kale. Froze the leftover’s. Next time will use mild sausage maybe add pepper flakes. Forgot cheese and bacon the next day for lunch, favor was milder.

As a former OG employee, just a few notes, way too much garlic, should be mild Italian sausage, and missing the crushed red pepper, also cut potatoes into slices and the starch will settle better
I’d give more stars if I could! This soup is wonderful, and I actually thought I wouldn’t really like it. I don’t like italian sausage but liked it in this (I used the sweet as I don’t like hot stuff). Only change I made was: instead of 6 cups water and 4 c. broth, I used 8 cups broth and 2 cups water. OH, I did ad some frozen corn too-we really liked that in it. This soup was so tasty. Me and hubby kept saying that while we were eating it, lol. Thanks Natasha

I am on a rather low sodium diet, and when people list the nutrition, it gives me a baseline on what the sodium level is as the recipe lists, and I can figure out how much I have to trim back. It helps a lot. Some of your recipes are low enough it doesn’t take a lot of work from me. Replacing sodium with flavor takes work, as I am sure you know!

Made this tonight for dinner! Delicious and rave reviews from my husband. Since there only the two of us, I didn’t want to add spinach to the soup as it would overcook when being reheated. So, not being a kale fan, I thawed and cooked part of a bag of frozen spinach in the microwave and added it to the soup bowls before serving. Perfect! I also only used 2 cups of water and 8 cups of chicken broth. Thank you for a terrific recipe!

Absolutely! I make this soup in bulk for my husband and freeze it. I place It in individual sized serving bags. All of the veggies hold their firmness after thawing and reheating. This soup is just as good the second time around!

I have made this 4 time and just love it but the last two time I made the soup it soured when i put it away to eat the next can you tell me why?
Hi Michael, it definitely should not sour that quickly. Did it taste off? Sometimes it may look like the fast separates from the broth but reheating fixes that right away. Hopefully, that is what you mean. I’m not sure why else that would happen unless there was some kind of substitution.

Hi Christie, I haven’t stored it for more than 3 days. Since it has dairy in it I probably wouldn’t go much longer.
It’s because of the kale.. if it’s cooked at too high of a temperature for too long the kale will sour. Happened to me once as well.
My husband isn’t a fan of kale. Could I use cabbage instead of kale and get a similar taste?
Hi Sheri, I haven’t tested that with cabbage but it does work great with Spinach. If you experiment with cabbage I would love to know how you like that.
My family hates kale, but after making this soup with kale it’s their fave soup. It wilts , isn’t bitter and I put so much mire than recipe calls for now cause it’s so healthy…

The cabbage would definitely alter the taste and easily overpower the other flavors in this soup. The kale and/or spinach are your best bets. Honestly, they pick up so much flavor from the soup, you’d be surprised. If you do use cabbage, please share the results.

I just made a pot of chicken stock from scratch; I was wondering if you ever used 100% stock instead of a mix of broth and water…??
thought it might give it a more robust flavor.
And by the way, your instruction to add the garlic for about a minute after the onions are sautéed is a much more knowledgeable instruction than dumping it in at the same time as the onions – as other recipes say. It will become bitter that way. Well done!

This soup is very delicious, hearty, and “zuppa” easy to make! I followed the recipe almost exactly, cooking the potatoes separatedly and adding the potato water to the pot. Also, I made a vegan version! I subbed bacon for homemade portobello “bacon”, sausage for homemade leftover spicy veggie patties, and heavy cream for unsweetened coconut milk. So yummy!!!

What is a good dish to make along side it? At Olive garden I get this soup and sometimes salad or a pasta, so I wasn’t sure what your thoughts are on this.
Hi Tashmier, we love serving this with dinner rolls. We have so many pasta recipes that it’s difficult to narrow it down but one of our favorites is Chicken pesto pasta. I agree this is wonderful with a fresh green salad (again, we have so many!), but Classic Caesar is always a good choice.

Would regular milk be ok? I could make my own heavy cream but I only have 2% milk on hand. If not I have some half n half. This will be my second time making your recipe but I had heavy cream last time. It also has good flavor using beer bratwursts, I took the casings off. Adding the red pepper flakes does give it flavor as well.
Hi Michaela, I have not tested that with milk but one of my readers recommended canned coconut milk (the cream part) to make it creamy and dairy-free. You can also use half and half to make it a little lighter.
Love your recipe! The only things I did a little differently were to keep the skins on the baby potatoes I chopped, to give it a rustic feel, and to add a cup more cream with one less cup water. It’s soooo good!

This is a great recipe. If you ever want to spice it up a bit. I swapped out half the sausage and replaced with Chorizo sausage to appease my Latino wife and her family. They absolutely loved it!
