I brought this salad to my parents house yesterday and everyone loved it! This is definitely going into the regular rotation all summer long. Think: homegrown cucumbers and tomatoes :).
Ingredients for Tomato Avocado Salad:
This salad is loaded with veggies; juicy tomatoes, crisp cucumber, creamy avocado and the cilantro and lemon juice make the whole salad so fresh and flavorful!
P.S. If you aren’t keen on cilantro, fresh dill is a good substitute
How to Make Cucumber Tomato Avocado Salad:
1. Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro into a large salad bowl.
2. Drizzle with 2 Tbsp olive oil and 2 Tbsp lemon juice. Toss gently to combine. Just before serving toss with 1 tsp sea salt and 1/8 tsp black pepper

My husband and I ate this entire batch of cucumber tomato salad with avocado in one sitting, paired with roasted red potatoes and grilled shrimp skewers. I shoveled most of the salad into my mouth before I remembered the shrimp and potatoes on my plate; mmming and smiling all the way through. We were both smitten.

Cucumber Tomato Avocado Salad
Ingredients
- 1 lb Roma tomatoes
- 1 English cucumber
- 1/2 medium red onion, sliced
- 2 avocados, diced
- 2 Tbsp extra virgin olive oil or sunflower oil
- 2 Tbsp fresh lemon juice, (from 1 medium lemon)
- 1/4 cup 1/2 bunch cilantro, chopped
- 1 tsp sea salt or 3/4 tsp table salt
- 1/8 tsp black pepper

Absolutely the BEST salad, ever!! Especially coming from an avocado loving family! I’ve made this salad at least 10 times and every time it’s wonderful! I do add a little but of minced garlic and Use the dill as suggested! Aaa+++ Recipe!

I actually make this salad or similar on a regular basis. I use cherry tomatoes and instead of cilantro (I call it coriander) I use flat leaf parsley as I don’t like coriander. Lots of pepper and olive oil. This is a good low carb salad too.

hello love your recipes. I love the dill for cilantro swap but how much dill?
Hi Lance, you can start off with less and add per preference. I usually add this to taste. I love dill but it can be strong.
This was absolutely amazing. Lots of Pepper and Salt for me and no corriander/dill. I also used scallion instead of red onion as none in. It was for my lunch – so I threw in some chicken breast pieces – BRILLIANT.

Hi Patty, this is best enjoyed fresh. The avocado will start to brown and the other veggies become mushy. I have eaten it on the second day and it was fine, but definitely not as good as fresh. It may be possible to precut the cucumbers and tomatoes the night before, then add the avocado fresh with the rest of the ingredients on the day of…

Hi Patty! Yes, you can increase this recipe without any issues. 🙂
I suggest making this several hours before serving so veggies can marinate a bit and the flavors can meld, especially the onion. Also add a splash of red wine vinegar or balsamic for more zest. Then add avocado chunks right before you serve it, not before, as it gets soggy and mushy.

Hi Dawn, I realize some people have an aversion to cilantro, Bummer! You can use chives instead or very finely chopped fresh parsley.
This is a wonderfully refreshing salad, especially in the summer. Such a simple brut flavorful dressing. I jazzed it up by adding salad shrimp, fresh red bell pepper and finely chopped purple cabbage. It was the main course for dinner. Absolutely delicious.
